物化性质 | 化学性质 能将构成植物细胞膜的多糖类(纤维素和果胶物质除外)加水分解的各种酶的总称。主要作用为使槐豆胶和古柯豆胶之类多糖中的β-1,4-葡聚糖键水解而成p糊精。由三种黑曲菌所制得的半纤维素酶,最适pH值为3.0、5.0和5.5;在30℃下维持24h活性仍为100%的pH值范围分别为3.5~10,2.5~6,4~7;在pH 5.6下维持15min活性仍为100%的温度分别为50~C:、60℃、70℃。 近白色至浅灰色无定型粉末或浅灰至深棕色液体。作为商品可含有食品级稀释剂、载体、稳定剂和防腐剂。溶于水,几不溶于乙醇、氯仿和乙醚。 |
