摘要:
β-甘露聚糖酶是β-1,4-D-甘露聚糖酶的简称,是一类能够水解含有β-1-4-D-甘露糖苷键物质的内切性水解酶.它广泛存在于自然界中,包括一些低等动物,豆类植物,而微生物则是β-甘露聚糖酶的主要来源.微生物来源的β-甘露聚糖酶具有活性高,成本低,来源稳定,提取方便以及比动植物更广的作用pH,温度范围和底物专一性等显著特点,应用前景极其广阔.文章综述了微生物β-甘露聚糖酶的来源,制备,性质,作用机制及其在饲料,食品,轻工,石油工业等方面的应用.

由我国内蒙乌杜淖碱湖中分离到一株能产β-甘露聚糖酶的嗜碱芽孢杆菌(AlkaliphilicBacillus sp.),产酶的最适培养基为(%):槐豆胶2.0,谷氨酸钠1.5,K_2HPO_4 0.1,MgSO_4·7H_2O 0.02,NaCl 8.0及 Na_2CO_31.0。产酶的最适温度和 pH 分别为32℃和10.0,酶的最适反应温度和 pH 分别为70℃和9.5—10.0,该酶在 pH9.0—10.0范围内稳定。酶对魔芋粉和槐豆胶的水解产物主要为寡糖。

The effects of the nutrition ingredients and cultural conditions on the production of acidic β-mannanase by )SO,1.0 g/kg CaCl,1.0 g/kg MgSO,2.5 g/kg KHPO,and 11.7 mL of HO.The highest β-mannanase activity was 1 337 IU/g dry matter by solid-state fermentation at 28 ℃ for 96 hours.
