Citronella acid colorless liquid; grass smell; almost insoluble in water, soluble in ethanol and oils. Citronella acid can be used as food processing essence: soft drink 0.5 × 10-6, frozen food 0.5 × 10-6, candy 0.5 × 10-6, baked food 0.5 × 10-6, jelly food 0.5 × 10-6. The citronellal is oxidized, and the aldehyde group is oxidized to a carbonyl group to obtain a citronella acid product.
