use
4-Vinyl-2-methoxyphenol is an aromatic substance and one of the compounds that cause the natural aroma of buckwheat. It is also one of the major pyrolysis products of (E)-N-[(4-hydroxy-3-methoxy)-phenylethyl]-3-[(3-methoxy-4-O-β-D-glucopyranoxy) phenyl]; a new glycoside in acrylamide tobacco.
Toxicity
can be safely used in food (FDA,& sect;172.515,2000).
use limited
FEMA(mg/kg): soft drinks 0.25~3.0; Cold drinks 0.25~11; Candy and baked goods 1.0~8.0.
production method
It is hydrolyzed by the reaction of vanillin and acetic anhydride with sodium acetate to obtain 3-methoxy-4-hydroxycinnamic acid, and then heated with quinoline to decarboxylate in the presence of hydroquinone.
