BETA-GLUCANASE - Introduction
Beta-glucanase is an enzyme that is extracted from Aspergillus Niger (Trichoderma reesei). The following is a description of the nature, use, preparation and safety information of beta-glucanase:
Properties: β-Glucanase is a glycoside hydrolase that catalyzes the hydrolysis of β-1, 4-glucan bonds. It usually exists in the form of powder or liquid, which has high catalytic activity and stability. The enzyme is most active under neutral to slightly acidic conditions, but can also be active over a wide range of temperatures.
Uses: β-glucanase has a wide range of applications in the food, brewing, textile and pulp and paper industries. It is capable of hydrolyzing the glucan structure in cellulose, thereby facilitating the degradation and utilization of cellulose. In addition, it can also be used in the food industry to clarify fruit juices, enhance the fermentation properties of dough, and increase the yield of brewed beer and vinegar.
Preparation method: β-glucanase is mainly prepared by fermentation process. Aspergillus Niger is widely used for the production of this enzyme, which is capable of secreting large amounts of β-glucanase in the presence of the substrate glucan. After fermentation, the enzyme can be purified by separation and purification methods such as ion exchange and gel filtration.
Safety Information: As a biocatalyst, beta-glucanase is generally safe under normal industrial operating conditions. However, if necessary, operators should wear appropriate protective equipment to avoid direct contact with enzymes. In addition, in potentially sensitive people, exposure to this enzyme may cause allergic reactions, so pay attention to the assessment and management of related risks during use.
