Physical and Chemical Properties | Chemical properties dark red purple powder, block, paste or liquid, slightly special smell, tasteless. No moisture absorption. Soluble in water, easily soluble in propylene glycol aqueous solution below 50% and ethanol aqueous solution below 30%, with a bright purplish red color. Insoluble in anhydrous ethanol and grease. The pH value of 1% aqueous solution is 4.0±0.5. The maximum absorption wavelength is 533nm. In the pH range of 2.5~8.0, the hue only changes by 5%, and the stability is good. When the pH value is above 6, the red color is slightly lighter. Heat to 100 ℃ without fading. The light resistance is good in the pH range of 4~6, and slightly changes when the pH values are 2.5 and 8. Precipitation is easy to occur below pH3.5. It is stable to Al2 + and Ca2 +, and unstable to Fe2 + and Sn2 + (especially in aqueous solution with pH value of about 4.6). Attention should be paid to it. The addition of cysteine hydrochloride enhanced the chroma. Salt has no effect on color value and hue. Good staining for proteins and carbohydrates. |
Use | Use colorant (red). For general food, such as flour, cold snacks, core, red bean rice, beverages, sweet wine, etc. |
