pure ellagic acid is milky white crystal, melting point at 360 deg C (decomposition). The impure extract is a white or pale yellow powder crystal or liquid, slightly soluble in water and ethanol. Ellagic acid contains four phenolic hydroxyl groups, with weak acidity, soluble in alkaline aqueous solution and benzene, ethyl acetate and other organic solvents. Ellagic acid has good heat resistance, and still does not decompose when heated above 150 ℃ for 6h, and has good oxidation resistance.
