Spirulina blBe colour - Physico-chemical Properties

Physical and Chemical PropertiesChemical blue particles or powder. It is a protein-binding pigment, so it has the same properties as protein, and the isoelectric point pH is 3.4. Soluble in water, insoluble in alcohol and grease. Unstable to heat, light, and acid. Stable under weak acid and neutral (pH value 4.5~8), precipitation occurs when acidic (pH value 4.2), strong base can be decolorized, poor stability to metal ions, and poor dyeability.
UseUse as a blue pigment alone users are not much, usually with safflower yellow pigment into green pigment preparation, for ice cream, cakes, instant powder products and horseradish powder. Non-extracted cyanobacteria can also be used directly as a pigment and as a protein source. Preferably used in combination with citric acid and phosphate.

It can be embedded with β-CD to improve heat resistance.
