| Descriptions | D-Isoascorbic acid, also known as fucoidan or isovitamin C, has a molecular formula of C6H8O6 and a molecular weight of 176.13. It is an optical isomer of vitamin C and therefore has similar chemical properties as vitamin C, belonging to the category of water-soluble antioxidants. D-isoascorbic acid is a food additive produced by fermenting glucose and other raw materials to produce 2-keto-D-gluconic acid, which is then subjected to esterification, acidification, refining and other steps. D-isoascorbic acid is a natural, green, and efficient food antioxidant that plays a significant role in improving food stability and extending storage life. D-isoascorbic acid is a white to light yellow crystalline powder or particle, odorless, with a sour taste. It is relatively stable in the air in a dry state, but quickly deteriorates when exposed to air in solution. |
