| Physical and Chemical Properties | Chemical properties are almost white to light brown yellow amorphous powder or liquid. Soluble in water, the aqueous solution is generally light yellow. Almost insoluble in ethanol, chloroform and ether. The main function is to hydrolyze protein into low molecular peptone, urea, polypeptide and amino acid. Natural products exist in animals, plants and microorganisms, and industrial products are mainly produced by mold. The optimum temperature for Aspergillus oryzae at pH 6.0 is 45~50 ℃. It is also known as acid protease (Acid-ResistantProteinase) produced by Asp.niger 3350 and B.cereus. The optimum pH value is 2.5 and the optimum temperature is 45 ℃. Copper ions or manganese ions with a concentration of 2 × 10-3mol have a strong activation effect, while silver ions and mercury ions have an inhibitory effect. |
| Use | Use enzyme preparation. Aspergillus niger is mainly used for the production of hydrolyzed protein, such as concentrated fish protein, amino acid seasoning and so on. Aspergillus oryzae is mainly used for cold resistance of beer (hydrolysis of protein in beer, to avoid turbidity after cold storage), baked products (to reduce the mixing time of dough; Hydrolysis of gluten to increase the softness of dough; prevents the curling of the soda biscuit-like dough when it enters the oven; Improves the flavor of the bread), softens the meat (hydrolyzes muscle protein and collagen, tenderness of the meat), etc. Acid proteases are mainly used in curd to make cheese. The highest dosage was 500mg/kg. |
