白色至黑黄色无定形粉末。溶于水,不溶于乙醇、氯仿和乙醚。钙、钠、镁等离子对其活性的影响不明显,铁、铜、锌等离子及多酚物质对其活力有抑制作用。最适pH值为3.O~3.5,最适温度为50℃。
采用黑曲霉作为生产菌。在含有豆粕、苹果渣、蔗糖等固体培养基中培养、经提取、深沉、分离、干燥、粉碎而成。商品制剂中尚需加入硅藻土、葡萄糖等填充料和稳定性、防腐剂等。
果胶酶可催化果胶中的甲酯水解,将多聚半乳糖醛酸分解成较小分子多聚物。主要用于果蔬汁饮料及果酒的榨汁及澄清。我国规定可用于糖水橘子罐头(去囊衣)、果酒、果汁,按生产需要适量使用。

白色至黑黄色无定形粉末。溶于水,不溶于乙醇、氯仿和乙醚。钙、钠、镁等离子对其活性的影响不明显,铁、铜、锌等离子及多酚物质对其活力有抑制作用。最适pH值为3.O~3.5,最适温度为50℃。
采用黑曲霉作为生产菌。在含有豆粕、苹果渣、蔗糖等固体培养基中培养、经提取、深沉、分离、干燥、粉碎而成。商品制剂中尚需加入硅藻土、葡萄糖等填充料和稳定性、防腐剂等。
果胶酶可催化果胶中的甲酯水解,将多聚半乳糖醛酸分解成较小分子多聚物。主要用于果蔬汁饮料及果酒的榨汁及澄清。我国规定可用于糖水橘子罐头(去囊衣)、果酒、果汁,按生产需要适量使用。
