物化性质 | 化学性质 高峰淀粉酶是从米曲霉培养液提取的消化酶的混合物,为黄白色粉末,在水中成浑浊的溶液,几乎不溶于乙醚。易吸潮,微臭,久贮后糖化力减弱,其溶液热至850C以上失去糖化力。在酸或碱存在下,糖化力减弱。它不仅能水解淀粉,而且还能消化蛋白质和脂肪。水解淀粉的能力是麦芽粉酶的1.5~2.0倍。最适pH4~6,其活性不受红茶、绿茶、咖啡等影响。 |
