物化性质 | 白色至浅棕黄色无定形粉末,有一定吸湿性,或为液体。溶于水和甘油,水溶液无色至淡黄争,有时呈乳白色,几乎不溶于乙醇、氯仿和乙醚等有机溶剂。由木瓜制得的商品酶制剂中,含有如下三种酶:(1)木瓜蛋白酶,分子量21000,约占可溶性蛋白质的l0%; (2)木瓜凝乳蛋白酶,分子量36000,约占可溶性蛋白质的45%;(3)溶菌酶,分子量25000,约占可溶性蛋白质的20%。其主要作用是对蛋白质有极强的加水分解能力。最适作用温度为65℃,最适作用pH值为5.0~7.0,在中性或偏碱性时亦有作用,耐热性强,可在50~60 ℃时使用。90℃时不会完全失活。等电点pH8.75。 |
