Physical and Chemical PropertiesDark purple crystals or crystalline fine powders with metallic luster. One of the oxidation products of carotenoids contained in citrus. The melting point was 136-140 °c. Insoluble in water, can be dispersed in hot water. Soluble in chloroform, insoluble in ethanol. Slightly soluble in vegetable oil, acetone. Soluble in oil or organic solvents in industrial products, stable performance. Or orange to red powder or granules that are dispersible in water. The crystal is unstable to oxygen and light and needs to be stored in a light shielding container filled with inert gas. Physiologically has the role of provitamin A, per gram equivalent to 120,000 international units of vitamin A activity. Natural products are found in citrus peel (0.9-3.4mg/kg), orange juice (0.005-0.02mg/kg), etc.
UseNatural carotenoids, which are produced in vivo with β-carotene, can induce cytochrome P450 1A (CYP1A) in mouse receptor responses.
