Physical and Chemical Properties	Bromelain is a proteolytic enzyme extracted from pineapple juice or pineapple waste skin, referred to as pineapple enzyme. It is a light yellow amorphous powder. Slightly soluble in water, insoluble in ethanol, acetone, chloroform, ether. The optimum pH is 7. Slightly stinky. Enzyme activity can be activated by bovine cystine and inhibited by heavy metals. The preparation of pineapple enzyme is enteric-coated tablets, which appear grayish brown after removing the casing. Compound pineapple enzyme tablets are enteric-coated tablets of pineapple enzyme and pig bile extract powder, which show gray brown after removing the casing.

It is a thiol enzyme with anti-inflammatory and anti-edema effects. Enzyme activity can be activated by bovine cystine, and by heavy metal inhibition. It can hydrolyze fibrin, casein and hemoglobin, dissolve fibrin and blood clots, improve body fluid circulation, increase tissue permeability, and lead to the regression of inflammation, edema and hematoma. It is characterized by the breakdown of large molecules of fibrin, but does not destroy fibrinogen necessary for coagulation.
