低聚麦芽糖 - Introduction
Oligosaccharide is a low molecular weight maltose polymer consisting of 2-10 glucose molecules. It has some of the following properties:
1. Solubility: Malto-oligosaccharide has good solubility in water, enabling it to be used in products such as food and beverages.
2. Moderate sweetness: Malto-oligosaccharide has a lower sweetness relative to sucrose, about 5-50% of sucrose. This allows it to be used as a sweetener in some foods without unduly increasing the sweetness in the product.
3. anti-crystallization: low-molecular maltose has good anti-crystallization, so that it can play the role of anti-crystallization agent in the manufacture of desserts and candies, and extend the shelf life of the product.
Oligosaccharide has a wide range of applications in food and pharmaceutical fields, some of the main uses include:
1. food industry: used as a sweetener and binder, added to beverages, candy, chocolate, bread, biscuits and other products, to increase the sweetness and improve the taste of the role.
