ALPHA-METHYL-L-TRYPTOPHAN is an amino acid with the following properties:
1. Physical properties: ALPHA-METHYL-L-TRYPTOPHAN is a colorless crystalline solid with a melting point of about 230-234 degrees Celsius.
2. Chemical properties: it has optical activity and can turn plane polarized light. Slightly soluble in water, soluble in strong acid and alkali solution. It is also an oxygen ion radical scavenger and has antioxidant properties.
ALPHA-METHYL-L-TRYPTOPHAN are mainly used for the following:
1. Food industry: As a food additive, it can be used as a flavoring agent and antioxidant to extend the shelf life of food.
