Physical and Chemical Properties | Chemical properties The general term for various enzymes that can decompose the polysaccharides (except cellulose and pectin substances) that make up the cell membrane of plants with water. The main function is to hydrolyze β-1, 4-glucan bonds in polysaccharides such as locust bean gum and coca bean gum to form p dextrin. The optimum pH values of hemicellulase prepared from three kinds of Aspergillus nigricans are 3.0, 5.0 and 5.5. The pH values for maintaining 24h activity at 30 ℃ are still 100%, 3.5~10,2.5~6,4~7 respectively. The temperatures for maintaining 15min activity at pH 5.6 are 50 ~ C:, 60 ℃ and 70 ℃ respectively. Near white to light gray amorphous powder or light gray to dark brown liquid. As a commodity, it can contain food-grade diluents, carriers, stabilizers and preservatives. Soluble in water, almost insoluble in ethanol, chloroform and ether. |
Use | Use enzyme preparation. Mainly used for processing cereals and vegetables, combined with pectinase can clarify citrus juice; used to process coffee beans, can increase the extraction rate of coffee; processed soybeans can improve its digestibility. |
