Use | Use enzyme preparation. The usage can be 30 international units of glucanase per liter of cane juice and kept at 40 ℃ for 20min, which can decompose 68% dextran. |

FAO/WHO(1992) stipulates that those made of Trichoderma (Trichoderma harzianum) can be used for wine preparation. In 1993, it was stipulated that those made of Aspergillus niger can be used for fruit juice, beer and cheese production.

Production method
It can be prepared by Penicillium, Aspergillus, Rotimularia, Aspergillus niger, Lactobacillus bifidus, etc. For example, when it is produced by Penicillium (Penicillium funicolosum), it is first cultured on a medium containing sucrose (Leuconostoc mesenteroides) to produce dextran, and then cultured Penicillium (P. funicolosum) with this dextran, the pH of the medium is 5.5-7.0, cultured at 30°C for 4-5 days, filtered out the bacteria, and dissolved in acetic acid buffer with pH 5.3. As a commodity, hemicellulase and pectinase can exist at the same time.
