Pelargonidin - Introduction
Pelargonidin (grape cyanide) is a natural plant pigment, which belongs to the anthocyanin class of compounds. It is widely found in many fruits and vegetables in nature, such as red or purple berries, plantain, cherries, cranberries, etc.
Regarding the properties of Pelargonidin, its chemical formula is C15H11O7N, which belongs to the structural 3-hydroxyphenyl anthocyanin. It has a molecular weight of about 331.25g/mol and has the appearance of a red or orange-red crystalline powder. It is soluble in solvents such as water, ethanol and dimethyl sulfoxide.
Its main use is as a natural food colorant. Due to its bright red pigment, Pelargonidin is often used to dye food products such as beverages, sweets, jams, ice creams and pastries, giving it an attractive and seductive color. In addition, Pelargonidin is also used in the fields of medicine and cosmetics.
Pelargonidin is mainly obtained from natural sources. A common extraction method is to use the Pelargonidin-rich Peel, pulp, and other parts of plant material, such as berries. The Pelargonidin obtained by extraction can be further processed by purification and crystallization to obtain a high purity product.
Regarding safety information, Pelargonidin is a natural product and is generally considered safe, non-toxic and non-carcinogenic. When used as an additive in food and medicine, it should be used according to the prescribed dosage to ensure safety. However, there may be an allergic reaction or adverse reaction to the individual population, such as people who are allergic to certain foods may be sensitive to foods containing Pelargonidin. Therefore, be sure to follow the relevant regulations and guidelines before use.
